Italian style flatbread

Description

I came up with this the other day, though I've no doubt lots of other people have also come up with it lol :)  It's really yummy so I had to share.

 

Makes about 20 flatbreads which can be frozen for later and eaten alone, with soups, as entrees, cut up and used as dipping bread or even as mini pizza bases maybe??

 

To make the dough, dissolve 1tsp sugar and 1tsp (or one sachet) of yeast in one cup of warm water inside a bowl.  Add 1 cup plain flour (or baker flour) and stir.  Cover with a teatowel and sit for half an hour - the mixture (sponge) should be bubbly and have risen.  Add two cups plain or bakers flour, 2 tablespoons olive oil and 3 teaspoons salt.  Knead for 10 minutes on a floured board adding more flour as you need.  Add a small amount of oil to the bowl and put dough in and turn it to coat in oil.  Leave for one hour covered with the teatowel.

 

Chop up about eight long stalks of rosemary and two cloves of russian garlic.  Grate some parmesan.

 

Roll out dough on floured board until it's a long sausage shape about 5cm thick and chop into chunks about the size of a billiard/pool ball.  Flatten each ball a little in the middle so that they're a well shape and put some garlic, rosemary and parmesan in the well.  Knead the dough a few times and coat in a little flour.  Roll out so it's almost paper thin, adding more flour to help if needed. 

 

Heat up some olive oil in a frypan and fry on low head until bubbles form and bread starts to brown.  Flip over and grind a little salt onto the oily side if you want (though the parmesan is salty enough IMO) and cook the other side.  Repeat with the rest of the bread.

I always want to have a go at flat breads - my naan turned out like a frisbee, or perhaps a UFO though, sigh...
