Chickpea tagine

Description

This is a really easy recipe that my aunty taught me. I love arabic food cos it really reminds me of home! I also find it avery romantic dish.

Ingredients

  • 1 1⁄2 c chickpeas (dried or canned) can also be replaced with other beans
  • 1 cn chopped tomatoes
  • 1 1⁄2 onion
  • 1 courgette
  • 1 handful of chopped almonds (optional)
  • 5 tomatos (diced)
  • 1⁄2 c chopped dried apricots
  • 1 t cumin and 1 teaspoon of paprika
  • 1⁄2 c chopped fresh pasley
  • 1 t harissa (optional for a bit of spice)

Instructions

Either soak chickpeas over night (if using dried) or rinse and simmer for until soft with the apricots. Fry up onion in olive oil until starts to brown, add courgette and fry for a couple of mins while adding the cumin and paprika. Add chopped and fresh tomatoes with nuts and harissa. Add the chickpeas and apricots and let simmer to let spices blend. Stir through chopped parsley and serve.

Notes

this can also be traditionally served with lamb for meat eaters.

mmm...Ive cooked a few

mmm...Ive cooked a few things with my tagine.  Lamb and prune my fav, but will try to give this a go too.
