The yummiest, easiest rice salad ever!

Description

I am not usually a fan of rice slald but I'm hooked on this!

Ingredients

  • 2 c cooked brown rice
  • 1⁄2 c finely chopped red capsicum
  • 1⁄4 c sunflower seeds
  • 1⁄2 c roasted cashews
  • 1⁄4 c currants
  • 2 T runny honey
  • 2 T Soy Sauce

Instructions

Mix honey & soy together in a large salad bowl. Add cooled, cooked rice and mix. Add remaining ingredients and mix. Enjoy!

Notes

If you cook the rice the night before and put in the fridge it will only take a few minutes to prepare the next day.

If you can't buy roasted cashews just dry roast your own in a frypan but be careful not to burn.
